Two years ago, I started exploring Viennoiseries and fell in love with laminated dough. I found R Dufour's organized digital course which guides you through mixing, shaping, proofing, and baking. I began with a croissant and noticed increased volume thanks to the addition of liquid levain. Romain recipe for a rice pudding croissant, topped with salted, was incredible! He is responsive to questions and shares valuable pro tips that made my baking experience even better. I highly recommend this course to anyone wanting to master croissant-making.

Pour son deuxième diplôme, Romain a été embauché au célèbre Hôtel Plaza Athénée à Paris, sous la direction de Christophe Michalak, Champion du Monde de Pâtisserie. Cette expérience a aiguisé le sens de la rigueur de Romain, sa créativité et son souci du détail.
